Sweet Potato Latte
Try this hearty and comforting Sweet Potato Latte, great for chilly autumn afternoons. The sweet taste of sweet potato, honey and cinnamon milk will be sure to warm you up. Moreover, sweet potatoes are an excellent source of Vitamin A, betacarotene (good for vision) and have a low glycemic index (GI) which means it will keep you fuller for longer and keeps your blood sugars stable during digestion.
2 sweet potatoes (medium sized)
500 ml milk (full-fat or half skimmed)
1 tbsp honey
1 tsp cinnamon powder
1.Clean and wash the sweet potatoes thoroughly and boil or steam them. After cooking, cut the potatoes in smaller chunks.
2.Add milk, honey and the sweet potato chunks in the blender and blend until frothy consistency.
3.Sprinkle cinnamon or additional syrup or whipped cream – enjoy!
